Ingredients:
1 lb. shrimp
1 onion, diced
5 garlic, minced
1 tbsp. ginger, minced
1 stalk lemongrass
2 stalk scallion
2 tbsp. cilantro, to garnish
1 round palm sugar
2 tbsp. fish sauce
2 tbsp. lime juice
1 1/2 tsp. curry powder
1 tsp. turmeric powder
1 tsp. cumin
1 tsp. coriander seed
1 can coconut milk
1 cup water
salt & pepper to taste
Directions: In a medium pot, heat oil on medium heat and add your palm sugar, cook until it is broken into small pieces and melted. Then, add your onion, garlic, ginger, lemongrass, and all the spices (curry, turmeric, cumin, coriander) and cook for 2 minutes.
Add your coconut milk, water, and scallion, salt & pepper then simmer for 20 minutes.
Add your shrimp and cook for 10 minutes.
Then, season with fish sauce and lime juice - you can add more salt & pepper if needed.
Transfer to bowl, add your cilantro and enjoy with steaming rice!
